Back to the Kitchen

As the weather is turning cooler, it feels good to get back in the kitchen and cook a little. And with the added bonus of garden goodies, I’ve been craving two of my family’s favorites – homemade salad dressing and zucchini bread. I made both this weekend and thought I’d share the recipes!

This is my husband’s grandma’s recipe from Scandinavia

Mix and let stand for half an hour:

1 cup sugar

2 tsp. salt

2 tsp. celery seed

2 tsp. paprika

2 tbsps. grated onion

Then alternate in blender:

2/3 cup vinegar

2 cups vegetable oil

Makes approximately 1 qt.

Got this recipe from my friend Melissa’s mom over 25 years ago!

3 eggs beaten until foamy

1 cup oil (I use 2 sticks real, salted butter)

2 cups sugar

2 cups peeled and grated zucchini

1 tsp. vanills

Mix above well.


3 cups flour

1 tsp. salt

1 tsp. baking powder

1 tsp. baking soda

1 tsp. cinnamon

½ cup walnuts or pecans (if you like!)
